Hector Boo Kitchen Take Over at Bleu Bite

Culinary Director of Sixtop Group (Miyagi Ramen, Hablo Tacos & Bos Taurus) is taking over the Bleu Bite kitchen for our Kitchen Takeover: A Chef Series — and this one is a global culinary journey.
Raised on the Atlantic coast of Galicia, Spain, and inspired by a recent trip to Japan, Chef Héctor’s cooking explores the connection between cultures through preservation, fire, and precision. Expect a storytelling-driven tasting menu that blends Galician heritage, Japanese technique, and Pacific Northwest ingredients. Think: oysters with smoked dashi, fire-kissed octopus, chistorra with miso honey, and a rice course inspired by both Galicia and Japan. Each course is designed to move intentionally — from bright and ocean-driven to comforting and reflective.
