Rawmona’s Artisan Kitchen, near downtown Bend, offers a unique approach to dessert and Mexican delicacies, serving treats like tamales, paletas (Mexican popsicles), and Mexican hot chocolate. Founder Karla Diaz Cano crafts creations that honor her heritage, health, and the Earth, distinguishing her work by using genuine Mexican cacao instead of processed cocoa, along with minimally processed, nutrient-dense ingredients like almond, coconut, or cassava flours, coconut oil, and natural sweeteners like maple syrup. Her decadent yet balanced cakes are gluten-free and low glycemic, featuring a silky ganache with piloncillo and authentic Mexican vanilla bean, often topped with a traditional crumble of cacao, almonds, and rosita de cacao. Diaz Cano’s intentional use of imported Mexican cacao, cinnamon, and vanilla bean ensures every bite is a celebration of her native culture’s flavorscape and ancestral wisdom.
